CHOCOLATE











Here are the straight FACTS about CHOCOLATE...

CHEMICAL COMPONENTS: All brands of cocoa, from which chocolate is made, contain more tannin per cup than tea which has approximately 2 grains of tannin per cup. Chocolate also contains theobromine, which is similar to caffeine, and a large amount of fats.

ADDITIVES: The bitter flavor of chocolate requires additives as well as large amounts of sugar to mask it and make it palatable.  Oils must be combined with chocolate to eliminate the grainy texture.  Chocolate has a minimum of 50% of the calories from fat. When milk, cream, or oil is added to help the texture, it produces an extremely rich, heavy, oily, indigestible item.

HARVESTING: Cocoa beans come from countries where sanitation levels fall far below those in the United States.  Workers cut the bean pods from the cacao tree and pile them to ferment for 3-8 days.  Fermentation is essential to develop the chocolate flavor.  BUT INSECTS, RODENTS AND OTHER SMALL ANIMALS MAKE NESTS IN THE PILES AND MANY KINDS OF CONTAMINATION CAN OCCUR.

Also during the fermentation process, the temperature rises and heat builds up, which promotes the growth of bacteria and molds.  Quantities of aflatoxins, the cancer producing agent from the molds, are produced in the cocoa beans.

CONTAMINANTS:  The United States Department of Health and Human Services lists contamination levels in chocolate from “insects, rodents and other natural contaminants” in two ways:

  1. Visible or solid animal excreta must NOT exceed 10 milligrams per pound.
  2. Chocolate powder must not have more than 75 insect fragments in 3 tablespoons of powder.  Many individuals thought to be allergic to chocolate may be allergic to the animal parts within the chocolate.  Do you still think you want to eat that candy bar?

HEALTH CONSIDERATIONS:  Women are advised to discontinue the use of coffee, tea, colas, chocolateand all forms of methylxanthines as a breast-cancer control measure.  Many physicians believe the effect on the male prostate is similar to that on the female breast.

CAFFEINE IS A DRUG: Here are some facts about it.  When you drink caffeine it pulls water out of the system.  We need to drink 8-12 glasses per day and cut out caffeine drinks. Our body is 80 % water, so we need to drink more water.

One of the organs most rapidly affected by caffeine is the brain.  Almost 99% of the caffeine that is filtered by the kidneys is reabsorbed.  Caffeine must be metabolized to be eliminated from the body.

Caffeine affects many of the body’s organs.  It constricts the blood vessels, speeds up the heart, and stimulates the brain, stomach, kidneys, ovaries and testes.

Symptoms of excessive caffeine include sleep disturbances, headache, tremulousness, jitteriness, anxiety, light-headedness, irritability, depression, rapid heartbeat, skipped heartbeats, rapid breathing, diarrhea, stomach pains, heartburn, frequent urination, and muscular tension.

Carob

Nearly everyone likes chocolate. How could you ever give up chocolate?  I felt that way myself at one time. God NEVER asks us to give something up without giving something BETTER in return.  And God does have something better than chocolate; something healthier for you and something that you will learn to really enjoy. That something is carob.

Carob belongs to the incredible legume family. The same family that gives you lentils and split peas also gives you a seed and pod that has a chocolate flavor with nutritional benefits instead of liabilities.

“And the same John had his raiment of camel’s hair, and a leathern girdle about his loins; and his meat was locusts and wild honey” (Matthew3:4).  Carob comes from a pod borne by a certain type of locust tree.  John the Baptist’s complete vegetarian diet was an important aid to his spiritual perception.  On account of his acute discernment in spiritual things, he recognized Jesus as the Messiah. God is calling His people to health reform in order that they might be prepared for Jesus’ 2nd coming – and carob rather than chocolate is part of that reform.  We are being given the same choice as John the Baptist was concerning diet.  May God quicken our perceptions as we follow the better way.

And God said, Behold, I have given you…every tree in the which is the fruit of a tree yielding seed; to you, it shall be for meat.”

Carob is an excellent source of calcium, potassium, pectin, and fiber, and contains iron, and vitamins A, B1 and B3.  It does not contain the oxalic acid or methylxanthines of chocolate and contains 2,000 times less theobromine (a stimulant similar to caffeine).  It contains about 50 times less fat and 3-4 times fewer calories than chocolate.  Since carob is naturally sweet and chocolate is naturally bitter, much less sweetener is needed with carob.

Carob does not aggravate skin problems, cause digestive problems, or cause allergic reactions as chocolate often does. 

Do not get the idea that carob tastes exactly like chocolate. Chocolate has its familiar taste because of the large amount of fats and sugars that are added to it.  These are very unhealthful for you, even in small quantities.   Carob has a slightly different taste than chocolate.  Personally I have grown to love carob. 

Carob can be substituted in any recipe by mixing 2 T. hot water with 3 T. carob powder. This would be equivalent to using a one ounce square of unsweetened chocolate.  If the recipe calls for cocoa powder, then use an equal amount of carob powder in its place.  You may want to wean your family off chocolate by using ¾ chocolate and ¼ carob in your next recipe. Do not tell them and see if they even notice.  Then the next time use ½ and ½ and the next ¼ and ¾ and so on until you are using only carob.

The dessert should be placed on the table and served with the rest of the food; for often, after the stomach has been given all it should have, the dessert is brought on, and is just that much too much.”  CDF 334

Let’s obey God’s divine plan to eat healthy. You wouldn’t put sugar in your gas tank or soda pop in your transmission. Then let’s not put caffeine in our bodies when God has told us not to.  May God bless you as you strive to feed your body healthy according to His manual. God made our bodies and He knows best what to put in it.
